The #1 - 0.8mm Set is for super fine materials or even shading.
#2 - 1.0mm sets are typical fine finishing projects - furniture, doors, bathtub finishes. It' a good choice for stains and most clear materials.
The #3 - 1.3mm Set comes stock with the T Model Guns. It's a good all around choice that allows for a degree of fine finish while still having the ability to spray slightly thicker materials with appropriate thinning.
If you are spraying medium-thick material like oil based paints and primers you'll want to step up to the bigger #4 - 1.5mm Set.
The #5 - 1.8mm Set allows for less thinning and is the smallest orifice size recommended for water based materials. This is the recommended Air Cap Set for Latex Paints.
The #6 - 2.0mm is a high output Air Cap set for thick, water based primers
The #7 - 2.5mm is typically used for materials with flake additives to prevent clogging
